I've chosen tonight to cook one of our family's all time favorites. It's always been one of the things that when the kids had a birthday and got to chose their "favorite meal", it was chosen more often than anything - and that is Pepper Steak. I also have another recipe that only requires 4 ingredients this time, which is a salad. I think the photos of cooked meat are just about borderline disgusting, so I only have one, but will go ahead and start. Tonight we're starting off with those beautiful roses that I used yesterday for Tablescape Thursday. They have another day of opening, and getting really pretty.
4 Ingredient Salad
1 large can of drained fruit cocktail
1 large container of whipped topping
1 large box of no-fat cottage cheese
1 large box of cherry (any flavor of choice)
Drain fruit and mix all ingredients in a large dish. Cover and refrigerate. Do NOT dissolve Jello, use it in powder form.
Pepper Steak
Steak cut in strips, I used 2 KC strips tonight
1/2 large green pepper, cut in strips
1/2 large onion, cut in chunks.
Season steak with garlic pepper and seasoning salt. Saute' in skillet that has a little oil in it, until the meat is no longer red (pink is okay). Add the vegetables, and sprinkle mixture with Worchestershire Sauce. Cook until veggies are starting to get tender. Add a little thickening of your choice to the juice.
Make your favorite rice according to the box!
Serve the steak over the rice. You can add more Worchestershire, or put it on the side to be added to taste.
Pull up a chair and sit down with us. There's always plenty of room for another plate at our table!
