Tablescape Thursday - Breakfast at the Tuck U Inn- Foodie Friday


My post this week, once again, begins and ends with Girlfriend Weekend/September 2009 memories. BFF Yvonne and I stayed at the Tuck U Inn, in Atchison, Kansas. This was our "virgin" experience with B&B's and we enjoyed it immensely. Can't wait to do it again.
The atmostphere at breakfast morning #1, is awesome. We choose to eat at 9:00 a.m., in the sunroom. The decor is perfect and just what I would chose if I it were mine.
The clock in the sunroom is on a pedestal and about 6' tall. I had never seen one like this in person and loved it the minute I saw it. I think I see one of these in my future.....
There is a huge armoire in the sunroom, decorated with bird houses and many other things. There is also plants, beautiful tables, and the round table and chairs.
The tradition at Tuck U Inn is for "dessert" first. Served in a chilled stemmed glass is the most amazing strawberry parfait I've ever had. It is served with our choice of juices and incredible hot coffee.
Our breakfast consists of ham and spinach quiche', cinnamon rolls and fresh fruit. The sun is coming in so pretty, I have to take several pix before I can eat.
In the above photo you see our thank you card made by our gracious host and hostess for our stay. When we arrived the day before, they took our picture out on the back porch, and put it inside. The house is exactly as it looks in the photo of the photo.

All the little touches are there, and some can be purchased as gifts. The knife rests are so pretty, sparkling in the sun. The little bird place card holders are perfect to hold our thank you card.
We drink our coffee every morning from the stone mugs, which we purchased before we went home. They are new items that can be purchased, and are quite beautiful.
I'm still taking pictures - Yvonne can't wait any longer!

Ohhhhh my goodness! It was worth the wait. MMMMMM!

Foodie Friday-4 Ingredient Recipe

One of our favorite "beach" foods in the summer time is my roll ups. They are so yummy, easy to transport on the boat, and store well in a sealed container in the cooler.

I use 12" tortilla's, 1-2 boxes of softened creme cheese, chopped green onions, slivered dried beef.

Mix the creme cheese and green onions, spread on tortilla's. Cover with slices of dried beef, roll, and using waxed paper, roll again. Refrigerate for at least an hour. Slice with sharp knife in 1" chunks, layer in a plastic container and separate wax paper. Cover and refrigerate.

Foodie Friday - easy Kabobs!


I always soak the wooden skewers while I'm preparing all the ingredients for my Kabob's. They fit into a tall pitcher filled with water pretty well, but I do turn them over after about 1/2 hour. My DH is the grocery shopper in our family, and he has a tendency to bring home "odd" salad dressings out of the "cheap" section of the grocery store. I NEVER (99.9% of the time) like these, but I use them for marinate. One of my favorite things to do is to buy chicken breasts, put 2 in a zip lock bag, dump on whatever kind of dressing it is, seal and freeze. When you are ready to cook, thaw, and cook. The marinate has been doing its thing while in the freezer. BUT back to the kabob's!!!!

My "recipe" is pretty simple. I went to the meat market, and bought a 1 1/2" thick piece of turkey that normally people have slivered for sandwiches. I also got potatoes, onions, and green peppers. There are many other veggies that would be good, or even mushrooms, but DH wouldn't like them. Anyway, I cut the turkey in squares, then put it back in the frig. The potatoes and green peppers went into a ziplock bag (after being cut in pieces) with a combination of ranch dressing and Dorothy Lynch dressing mixed together, coated them well. I zipped the bag, leaving room for it to breath, and placed in the microwave for 5 minutes to precook the potatoes enough that I could skewer them.


I alternated the meat, potatoes, raw onion, green pepper, and more turkey onto the skewers. Then, poured the remaining marinate over them. After they were all skewered, I put them on a tray, and sprinkled them with garlic pepper.

The Kabob's were placed on a medium heat grill, and turned to assure doneness/browned on all sides. Since all of the ingredients were pre-cooked, it only takes about 20 minutes.

I served the kabob's at a deck party at friends cabin down the street at the lake. You can tell that everyone was in the mood for a fresh summer meal, with fresh cukes, tomatoes, and freshly made pasta salad. The kabob's were a hit!

Thrifty/Tablescape Thursday and Foodie Friday



Welcome to our cabin at the lake for late Saturday morning breakfast. I have a tradition at the lake. I get up late, make my pot of coffee, and grab a magazine. I sit and enjoy my first cup of coffee in the peace and quiet, and on a really good day, I can be on the deck to do so. Now days it's too hot to do that, so I sit in the air conditioning instead!
This Saturday, we're having home made sausage patties,
and french toast. So, out come the eggs, and since we're at the lake,
we're using regular bread for the french toast.
Cover it with eggs, throw it in the skillet that the sausage was cooked in, and sprinkle it with cinnamon.
Doesn't take long, and I'm still on my second cup of coffee! I got the cow mug at Pier I when I was there last winter. I couldn't pass up a bigger cup than any of the others that I have.
We're using the OLD stuff today, the silverware from my hope chest, from Duz soap, circa 1960's, and the Corelle that we found.
DH like syrup on his french toast, but not me - not today. I have a friend at work who made HOMEMADE peach jam this week, and I want that on mine!
It is the most beautiful shade of peach! Ha! Yes, she took an innocent bowl of peaches like this and made them even better!
So, here it is, ready for me to enjoy, pull up a chair and have some with us, won't you?

Foodie Friday

Two of our grandsons were here last week and over the weekend, some of our kids (2/3) came home. I love it when they do, because we always have comfort foods. These are the foods that they request over and over again. I'm posting today, some of our family favorites. We spent the day on Saturday at the lake out on the boat, then left the cabin and came home for Saturday night supper.
Fresh picked corn on the cob. My DH's cousin lives down the road and she sells her corn from the back of her truck this time of year. You pay for a dozen, you get 13. It's called Cream and Sugar or something like that. It just melts in your mouth, and is so sweet.
I was so hungry this week for my homemade potato salad. When I was young, my Dad always made the potato salad at our house. He used mustard and sugar to spice it up. I LOVE to eat this potato salad when it's still warm. It reminds me of Dad.
And to top it all off, 1/2 inch cut pork chops, on the grill. My DH does all the grocery shopping, and he knows how to buy meat! I also made a lemonade dessert that is really easy. I'll have to post it in my 3 ingredients list one of these days!
On Sunday a.m., we had breakfast consisting of fruit salad. I just bought a bag of frozen fruit, and added our own frozen strawberries. Mmmmm...good!
And the weekend was complete with "drippy rolls" as DIL, Carla, calls them. Everyone enjoys their own sort of "comfort foods". Hope you didn't mind me talking about ours!

Foodie Friday




Kansas Dirt Cake
I made this one for baby Emma's baptism for fun for the kids. There are many different ways to make it, I saw on BNOTP, Susan used cheese cake type recipe.

This is what I do.

Bake 9x13 chocolate cake any kind, your favorite recipe or brand.
Tear the cake up and place 1/3 in the bottom of a clean flower pot.
Make chocolate pudding (cooked kind works better) and pour over the cake.
Using 1/2 container of whipped topping, spread over top of pudding.
Layer chopped peanuts, and on top of that, gummy worms.

Continue to layer until the cake is used up. End up with the peanuts, worms, then a layer of crushed oreo cookies. Using a childs set of gardening tools, place them in the flower pot or on a tray holding the flower pot. If you like, insert the stem of an artificial flower for fun. Foodie Friday

For the last few years, I've had a flower bed in the yard that I planted with Wave petunia's. 2 Years ago they didn't do well, and the flower bed ended up being weeded quite often, and very few, if any, flowers ever bloomed. Since the nature of my job is for me to be gone sometimes weeks at a time, only home on weekends, my DH decided the flower bed HAD to go and he wanted to plant it with something we could ENJOY!
When I used it as a flower bed it was just the bottom 3 railroad ties. When DH decided to use it, he added the next 2 levels.
DH bought strawberry plants last year and babied them all summer long. This is what they looked like after a cold and snowy winter.
We haven't had strawberry plants for 20 years, so hoped and prayed that they would winter well. It seems they did.
This is what they looked like early in March and April.
And this is what they look like now. They are healthy plants and have a lot setting on.
The fruit isn't very big, but there's sure a lot of it.
Wait a minute! What's this? There's suddenly little fingers in my camera lens! Hmmm, I can't imagine who it could be!!!!! Someone very quiet who was behind me, I bet.......
I see who that is! It's Brady and he's been having a little snack! If you click on the photo you can tell by the pink around his mouth!!!! He obviously knows how good they are!
A little bowl of homemake ice cream, a little sugar on the berries and oh baby! What a treat!
I hope you all enjoyed seeing our first strawberry crop as much as I had bringing it to you!
